Denver spot serves up one of country’s ‘best dishes of 2023,’ says New York Times

Denver’s Brutø recently made a list from The New York Times of best restaurant dishes in the United States of 2023.

The restaurant’s carefully baked ‘hearth bread’ is the dish that made the cut for inclusion. Although fresh-baked bread service is common these days, Brutø’s version is special, according to The New York Times.

The bread is made from Colorado grain that’s milled nearby, and the personal-size boules are baked in an oak-fired oven for only a minute and a half before they are served. Dotted with char, the bread is served with rotating pairings like house-made achiote butter or mole blanco dipping sauce.

Located in downtown Denver, Brutø offers an omakase-style tasting menu with seasonal, core ingredients inspired by Latin and global cuisines. The restaurant encourages interaction and believes that “food is meant to be unabashedly enjoyed, delighted in, and savored.”

Brutø has a Michelin Star for high quality cooking, as well as Michelin’s newest award, the Green Star. The Green Star is awarded to restaurants that are “role models when it comes to sustainable gastronomy.”

Brutø is also highly-rated online, with a 4.5-star rating on Yelp and a 4.7-star rating on Google Reviews.
