Classic breakfast fare, creative Eggs Benedict variations at brunch spot south of Denver | Dining Review

It’s easy money wagering that Benedict’s in Greenwood Village features numerous variations on the classic egg dish bearing its name; the odds are even better you’ll have a difficult time choosing from the large selection of available breakfast items.
Benedict’s is only open for brunch, with a large menu consisting mainly of fare associated with morning meals in addition to salad and sandwich selections. The vibe here is more upscale and less diner: think cloth napkins. Plus, the stone, two-sided fireplace in the center of the dining area adds a bit of class.
Served with hash browns and a slice of watermelon, the Bennies we ordered were far from the standard. Consider the Cajun option ($17.95). Rather than poached eggs with Canadian bacon on a toasted English muffin doused with Hollandaise sauce, this version combines seasoned shrimp with diced red pepper and scrambled eggs. The muffin still serves as the base, but the sauce provided a completely different flavor profile: chipotle Hollandaise!
There was a surprising (and pleasing) amount of shrimp in the mix and the sauce was more savory than piquant. Still, it was an impressive combination of seasonings and textures. The shredded spuds were crispy and creamy, just as they should be.

The Brooklyn Benedict took the concept in another creative direction: In place of English muffins, potato pancakes were topped with pastrami covered by two poached eggs and the characteristic sauce associated with Benedicts. An extra potato cake and watermelon completed the dish. The cake, however, lacked the creaminess of the basic hash browns.
Although there was a menu section that featured a handful of south of the border dishes, the Mexican Scramble ($17.50) was listed under Scrambles.

Scrambled eggs mixed with chorizo, diced onions, tomatoes and jalapenos were concealed beneath a thick layer of yellow and white cheeses. This came with a choice of flour or corn tortillas and a side of smoky salsa and hash browns. The chorizo was on the bland side, so the salsa provided much-needed spice.
Similar to the scramble was the Farmer’s Market Skillet ($16.50). This was a veritable garden of sautéed veggies. Onions, mushrooms, broccoli, tomatoes and green peppers are topped with basted eggs (which were subbed in instead of scrambled). This was all covered in a more-than-ample amount of cheese.
A lot less cheese would have made this dish a winner. The entree came with a choice of English muffin or toast and small dish of homemade berry jam.
As mentioned, the menu is extensive with several categories.

These included omelets, skillets, egg entrees, pancakes and Belgian waffles, along with “More Goodies.” The latter include blintzes, oatmeal, French toast and much more.
Among the handful of sandwich choices are a Rueben, tuna melt and cheeseburger.
Service was attentive and food arrived from the kitchen quicker than expected. A coffee urn was placed on the table for easy refills.
This was also the first time I’d seen small bottles of hand sanitizer set on the tables by the salt and pepper shakers.
It was appreciated.
