Lower Downtown’s Denver Milk Market has a few new changes after an extensive refresh project.
The food hall at the Dairy Block announced it built a game room and has three new restaurants to its mix including a pop-up from Jim Pittenger of Denver’s iconic Biker Jim’s Gourmet Dogs.
The Milk Market’s new arcade features skee-ball, shuffleboard, Pac-Man and air hockey, which are free to play, according to the food hall.
The space also got new paint, lighting, furniture with a lounge area and a new mural titled “Highest Stakes” from Colorado-based artist Graham Carraway.
The goal of the renovation was to make the food hall into a more of a communal gathering space, Rutherford said.
“We just want to make the space more interactive for people,” said Milk Market’s General Manager and Executive Chef Jamie Rutherford.

The Milk Market debuted Bikers & Bakers from Pittenger this week.
Pittenger, of Denver’s iconic Biker Jim’s establishment, in July walked away from his business of nearly 20 years due to a failed partnership with an investor, he announced in a Facebook post. With his new concept Bikers & Bakers, Pittenger said it allows him to play with his culinary abilities beyond the staple gourmet hot dogs he’s known for.
Biker Jim’s founder Jim Pittenger opened a pop-up location Bikers & Bakers at Denver Milk Market after parting ways with his gourmet hot dog restaurant.
“There’s something about getting out of a rut that always breathes new energy,” Pittenger told The Denver Gazette.
His new restaurant running out of the Lou’s Hot & Naked outpost will serve elk jalapeno cheddar sausage, wild boar sausage and bacon cheddar brat. On weekends, the menu will feature one of Pittenger’s breakfast favorites: pancakes.
The menu includes lemon ricotta pancakes, mochi pancakes and sour cream waffles. Pittenger also said he hopes to dabble more in selling cheesecakes.
The new brand gives him more freedom to try new recipes and temporarily add them to the menu to see what sticks with customers, Pittenger explained. He added he plans to be at the Milk Market for at least three months to start off his new concept.
“That’s what’s great about this place and also kind of what’s fun about calling it a pop-up. You get to experiment,” he said.
Denver Milk Market finished a renovation project to install new lighting, paint, furniture, arcade and lounge area to make the food hall more. “communal,” its general manager said.
The Milk Market also combined several of its vendors to create two new restaurants: Bos Butcher & Deli and Fuso.
Bos Butcher & Deli, as the name implies, combined the Milk Market’s butcher and deli and Fuso combined its pizza and pasta stands together.
“We thought it would be a little bit more efficient,” Rutherford said, adding it would also ensure adequate staffing at all times.
Fuso offers staples such as pepperoni and margherita pizza and has a new wild mushroom pizza and artichoke pizza. The pasta menu features pappardelle with Bolognese and shrimp pesto bucatini.
Bos Butcher & Deli sells a cowboy burger with pickled jalapeños and barbecue sauce and a B.B.L.T, a bacon, lettuce tomato sandwich with burrata.
