Sneak peak of Emilia, the newest RiNo restaurant from Michelin-recognized team

The co-owners of Denver’s acclaimed Restaurant Olivia are working to open a new restaurant in the River North Arts District next year named Emilia.
Construction is about to speed up for Emilia, according to a press release, and is set to open next year during the spring or summer. The restaurant team released new renderings Tuesday of what the restaurant would look like.
Emilia will open inside The Current, a 12-story office building in RiNo at 3615 Delgany St.

The 3,700-square-foot restaurant was designed by Denver-based Regular Architecture, which has also designed local restaurants Beckon, Sap Sua and Hey Kiddo.
The interior design features modern elements with wood and concrete furnishings, renderings show.

The concept comes from Chef Ty Leon, Austin Carson and Heather Morrison. The team is behind Olivia, which is one of Denver’s Michelin-recommended restaurants and known for mixing Italian food with “global flavors.”
Emilia will go all in on Italian cuisine and is inspired by the Mediterranean nation’s Emilia-Romogna region, home to cities like Parma, Reggio and Bologna and considered the birthplace of prosciutto, Parmigiano Reggiano and balsamic vinegar.

“While at Restaurant Olivia, we pride ourselves in blending Italian cuisine with global flavors, Emilia will be a pure tribute to Italy,” Leon stated when the restaurant was first announced.
“We are also excited to bring some of the beloved favorites from Restaurant Olivia to the table, reimagined with a twist that pays homage to Italy’s rich culinary diversity,” he added.
Leon will run the restaurant’s menu alongside Bar Director Erika Copeland and Wine Director Scott Thomas, who also come from Olivia.
