Swedish hot dog pop-up coming to Denver for the holidays
Santa isn’t the only one bringing holiday cheer to the Mile High City – a Swedish hot dog pop-up is bringing festive flavors to Denver this Saturday.
In a collaboration between two women-owned businesses, Chef Amelia Eudailey of Hej Hej and Lotties Meats & Provisions are set to deliver unique hot dog creations during a holiday pop-up event at Call to Arms Brewing Co. on Dec. 14 from noon to 3 p.m.
Hej Hej is a Swedish street food pop-up founded by Eudailey, which she founded last year in the San Francisco Bay Area, deciding to leave a career in the tech industry to pursue her culinary interests.
The offerings blend traditional Scandinavian flavors with modern, creative twists. Pronounced “hey hey” like a cheerful greeting, Hej Hej serves up innovative dishes inspired by Eudailey’s childhood memories of visiting her grandparents in Sweden.
Since its inception, Hej Hej has expanded to multiple pop-ups throughout the Bay Area. This weekend’s event will mark the first for Eudailey in Denver, where she spent her formative years.
“I had always wanted to do a pop in my hometown of Denver,” Eudailey said. “[The pop-up] is a match made in heaven. It’s the most fun excuse to showcase Lotties Meats’ insane hot dog creations alongside my Swedish hot dogs.”
Lottie’s Meats and Provisions is a Denver-based sausage brand specializing in “chef-crafted, convenient, creative pork sausages and ground pork blends”. Launched by sisters Chelsey and Cassie Maschoff earlier this year, the company is a nod to their upbringing on a generational family farm in rural Illinois.
“Our commitment to quality, creativity and connection extends to every pop-up we do, which is why collaborating with Chef Hej Hej is such a joy and a perfect fit,” Chelsey Maschhoff told the Denver Gazette. “Her celebration of Swedish heritage through imaginative, gourmet hot dog toppings and Nordic fare in the form of unique pop ups and community building is what we are all about – celebrating, fueling and connecting more people in more places.”
The pop-up menu includes offerings such as the French Onion Brat, topped with caramelized onions, stoneground mustard and spicy shallot aioli ($15), and the Swedish Juldog, a Christmas buffet-inspired hot dog with cheesy mashed potatoes, dill egg salad and pickled beets ($17). Crispy potatoes with spicy shallot aioli ($6) round out the menu.

The family-friendly event is open to all ages, with no reservations required. Guests are welcome to pair their hot dogs with beers and ciders from Call to Arms, creating the perfect break from the hustle and bustle of the holidays.
