CIMERA OPENS IN RINO

Cimera, a new Latin restaurant and cocktail bar, opened at The Source Hotel’s rooftop in Denver’s River North Arts District.

It’s the newest dining business at The Source Hotel, home to a market hall and several eateries recognized by Michelin or the James Beard Foundation Award including Safta, Temaki Den and Reunion Bread.

Cimera is a concept from Apicii, a hospitality company founded by Tom Dillon with restaurant and bar locations around the U.S. including New York City, Miami and Los Angeles. Its main and private dining rooms feature retractable glass walls to have an open rooftop experience when weather permits.

The restaurant is spearheaded by Peruvian Chef Diego Muñoz and Denver-based Chef Geoff Cox, who worked at the Michelin Bib Gourmand and James Beard-nominated Hop Alley.

The restaurant describes its menu as “contemporary Pan-Latin.” It gets influence from Mexican, Central and South American cuisine.

Some creations include pork belly anticucho (pork skewers with nikkei glaze and scallion dressing), ribeye with roasted onions, semi-dried tomatoes and aji-amarillo bearnaise or octopus carpaccio with avocado cream, olive vinaigrette, roasted peppers and breadcrumbs.

“There’s nothing quite like Cimera in Denver, where guests can enjoy exceptional food and cocktails in a design-forward rooftop gathering space, set against the Denver skyline and the Rocky Mountains,” Dillon said in a press release. “Chef Muñoz’s expertise in Latin and Peruvian cuisine, paired with Chef Geoff’s deep connection to Denver, creates a distinctive culinary experience, further adding to The Source Hotel + Market Hall.”

VAN LEEUWEN OPENS SECOND ICE CREAM SHOP IN DENVER

The national ice cream brand Van Leeuwen is growing its presence in Denver.

Van Leeuwen will open its second scoop shop in the city, and the third in Colorado, at 1535 Platte St. on Wednesday.

The ice cream brand was founded in New York City in 2008 and became quickly known for its decadent recipe that incorporates more egg yolk than the average ice cream. It now has 100 shops across the nation, including the ones in Larimer Square, Boulder and now Platte Street.

The ice cream shop will be in a 1,162-square-foot location across the South Platte River from Commons Park in downtown Denver.

“Denver has welcomed us with open arms at Larimer Square, and we’re thrilled to expand and bring even more good ice cream to the city,” said Ben Van Leeuwen, the company’s founder and CEO, in a press release. “Denver has such an incredibly vibrant food and beverage scene, and we’re grateful to be part of it.”

It will be open at noon everyday. The Van Leeuwen will close at 11 p.m. from Sunday to Thursday and at midnight on Fridays and Saturdays.

KING SOOPERS BREAKS GROUND ON NEW STORE IN ARAPAHOE COUNTY

King Soopers, the Colorado-based grocery chain owned by Kroger, is building a new store in Arapahoe County.

Construction began last week on a new 122,000-square-foot Marketplace store on the southeast corner of Quincy Avenue and Copperleaf Boulevard, King Soopers announced. The store will be located 12 miles east of Cherry Creek State Park, right before the E-470 toll road.

The King Soopers store will feature sushi, Starbucks, Murray’s Cheese Shop and a larger selection of home and lifestyle goods. It will also have a drive-thru pharmacy and a gas station.

The store is expected to create more than 250 jobs, the grocer said.

“This new store is about more than bricks and mortar; it’s about investing in the future of this community. It means new jobs, better access to fresh and affordable food and expanded shopping access for individuals and families,” said Chris Albi, President of King Soopers, in a press release.

The company said it expects to open the store next winter.
