“Unexpected twists” and “sense of fun” drive menu at new sushi spot from acclaimed restaurateurs
A new sushi concept that’s being opened by Michelin Bib Gourmand restaurateurs is set to start serving a wide range of cuisine on April 30 and with fish from around the world, dishes that include ramen with rabbit confit, and a cheeseburger said to be “incredibly delicious,” it’s a spot that’s designed to cater to every palate.
Dubbed Odd Rabbit and opening on Boulder’s Arapahoe Avenue, the team behind Denver’s popular and acclaimed glo Noodle House has been hard at work to create a new spot.
“Odd Rabbit’s menu highlights pristine nigiri, hand rolls, inventive small plates and unexpected twists, all rooted in traditional Japanese technique while embracing a sense of fun,” reads a press release on the matter. And there’s plenty of experience present in the restaurant’s sushi program, overseen by Chef Stephen Nguyen who people might recognize for his work with Temaki Den and Uncle. Per the restaurant, the experience is anchored by “an impressive nigiri selection featuring bluefin otoro, chutoro, and akami, alongside salmon, hamachi, scallop, amaebi, and wagyu.” The hamachi and scallops come from Japan, the tuna is from Spain, the salmon is from Scotland, and waygu is locally sourced from Colorado.
A trio of ramen dishes offered at the spot will be exclusive to Odd Rabbit, but come from the same brains that built glo Noodle House – often called one of the best places for ramen in the Mile High City. From the aforementioned option with rabbit confit to another one with roasted pork and mushrooms and a spicy option that features crispy-chili-glazed chicken, it’s a sure thing that all ramen dishes will be worth a try.

Small plates are also on the menu, including chicken wings glazed in fish sauce caramel with peanuts, as well as pickled crab claws served with citrus mayo. And don’t forget about the double cheeseburger, topped with American cheese, house pickles, cured cabbage, a savory miso mayo, and pepper jelly.
“Ultimately, our goal was to create a menu that excites everyone at the table,” said Christopher Teigland. “There’s something for the sushi lover, the noodle enthusiast, and even the guest who might not gravitate toward seafood.”
In addition to the carefully curated food menu, expect to find the same creativity when it comes to drinks, as well. Cocktails, mocktails, sake flights, and more are sure to complement a meal at Odd Rabbit.
Odd Rabbit’s space is quite large, with close to 3,500 square feet of indoor space and about 1,500 square feet of patio space. Included among 90 seats inside is a 10-seat chef’s counter that’s sure to further heighten the experience.
