Metro moves: Denver airport adds more local restaurants

Plus, Butterfly Pavilion names a new CEO and a California chain is opening its first Colorado location.

Another slate of restaurants are opening at Denver International Airport this week.

Four new Denver-based businesses will officially debut in a new marketplace within Concourse A on Tuesday, including Native-American restaurant Tocabe and speakeasy cocktail bar Williams & Graham. The marketplace will also feature The Bagel Deli and D Bar.

Tocabe, a North Denver restaurant founded in 2008, specializes in Native American cuisine and includes family recipes from the Osage Nation. The airport will be home to its second location.

Williams & Graham will be hidden behind a “discreet bookstore facade” at the airport. The speakeasy is based in the Highland neighborhood on 3160 Tejon St. It offers classic and inventive drinks and takes inspiration from Prohibition-era bars.

Another local name is expanding with its second location. The Bagel Deli has been a family-owned staple in Denver since 1967, offering New York-style bagels and deli meats at 6439 E Hampden Ave. off of Interstate 25.

D Bar, which has a location in Denver’s Central Park neighborhood, will serve desserts and comfort foods such as milkshakes and cupcakes, as well as savory dishes.

The airport marketplace by Gate A38 will be operated by Mission Yogurt, a Denver-based hospitality firm that specializes in airport dining and shopping in hubs like DIA and San Diego.

California chain opening first Colorado location

California-based fast casual chain Mendocino Farms is opening its first location in Colorado in Denver’s highly-coveted Cherry Creek North neighborhood next week.

The restaurant will open within the new four-story office building at 320 N. Fillmore St. on May 6, according to the chain’s website.

Mendocino Farms, founded in 2005, features a variety of original sandwiches and salads using fresh ingredients, such as a winter citrus and goat cheese salad and a chicken and hummus crunch wrap.

The chain has dozens of locations in California and has expanded into Washington and Texas and will soon open in Illinois.

Butterfly Pavilion names new CEO

Westminster’s insect and invertebrate zoo has a new leader.

Ryan Welch was named president and CEO of the Butterfly Pavilion, the nonprofit organization announced Monday.

Welch comes from the Morris Animal Foundation, where he served as the interim CEO. He also previously worked at Rocky Mountain Public Media, the region’s PBS station, and led a $34 million campaign to build its media center in downtown Denver.

He’ll take over the Butterfly Pavilion beginning May 19.

Welch will be responsible for continuing the nonprofit’s conservation work, expanding its audiences and working to build a new facility

“I’m honored to join Butterfly Pavilion at this transformational moment,” Welch said in a news release. “Invertebrates make up 97% of all animal species on the planet and are the foundation of life on Earth, and yet they are too often overlooked.”
