Ash & Agave opens in Cherry Creek
Ash & Agave, a new coastal Mexican restaurant, opened at the Cherry Creek Shopping Center this week in the former space of California Pizza Kitchen.
The restaurant was launched by Restaurateur Sean Huggard, the owner of Shucking Good Hospitality which runs Blue Island Oyster Bar and Oliver’s Italian. It opened Monday.
It features flavors from the Mexican Riviera, Mexico’s coastal region along the Pacific Ocean, using wood-fired cooking and highlighting mezcal-based cocktails. Dishes include wood-grilled oysters from the Blue Island Oyster Farm on Long Island, chargrilled octopus, baja-style mussels and sea bass ceviche.
It also has a “Carne Locker,” premium meats such as presidente cut skirt steak, black angus ribeye, lamb rack and gaucho sausage cooked over a 900-degree fire.
“Ash and Agave was designed to give a feeling from the moment guests walk through the door. We wanted a space where the lighting, music, cocktails, and food all work together to create something transportive,” Huggard said in a press release. “It is lively, warm, and built for connection, whether guests are joining us for dinner, drinks, or a long evening with friends. We are thrilled to bring this incredible concept to Cherry Creek.
