House-made flavors the focus at must-try Italian spot in Colorado Springs

If you’re craving some delicious Italian food in Colorado Springs – but don’t want to deal with making reservations at a fine dining spot, you should know about Stellina Pizza Cafe.

Found a few blocks east of downtown, this restaurant serves up popular Italian staples without the ‘stuffy’ atmosphere found at some upscale spots. Diners order from a counter and find a table to wait for their food. The aesthetic of the spot is modern, yet homey, and staff is friendly and attentive.

Enough of the set-up though – let’s get to the food.

Stellina is best known for their pizza, pasta, and gelato – all of which have key elements that are house-made. The pizza is built on house-made sourdough crush, the pasta relies on house-made noodles, and the gelato is house-made from scratch in small batches.

After a bit of internal debate, I went with the lasagna ($24.95) during a ‘reward’ visit after a long day of yard work and it absolutely hit the spot. The portion was a good size and the lasagna was cut vertically, meaning that five or six layers were stacked opposed to the standard three or four. It’s also worth noting that the noodles in the lasagna consist of flour, water, and salt – I didn’t get the bloat I often do from pasta dishes elsewhere.

I didn’t stop at the lasagna, either, sharing the tomato basil soup ($9.95), the warm caprese ($10.95), and the focaccia ($6.95) with my partner, too – all three of which were downright delicious. Others I was dining with loved the pizza, as well – and any time I’ve mentioned the spot to someone after my visit, they’ve raved about the gelato, too. I’ll have to go back to give both of those a try.

It’s also worth noting that we tried a sampler of mini-cocktails during our trip ($12), all three of which were flavorful and on the lighter side. No complaints there.

Next time you’re in the Springs and craving Italian, Stellina’s is worth the try. It’s highly rated, too, with 4.6 of five stars on Google.
