Restaurant in space once occupied by city morgue can’t be skipped in Colorado

Lately I’ve been on a mission to hunt down restaurants I haven’t tried before, but a recent revisit to a well-known Colorado Springs spot reminded me that some local favorites deserve a bit of recognition, too.

Located beneath a downtown block of Olympic City, U.S.A. is a quirky yet classic fine-dining destination that shouldn’t be skipped – The Rabbit Hole.

In a space that was once the city morgue but has since found new life as a sleek and eclectic spot for New American cuisine, The Rabbit Hole got its start in 2011 and it’s been among the top Colorado Springs restaurants since. “Wonderland-inspired,” The Rabbit Hole serves up numerous creative entrees and memorable cocktails – and the experience of exiting the sidewalk to walk down the steps of an entryway that feels like that of a metro station and into a dimly-lit sort of speakeasy is one patrons won’t soon forget.

During a recent birthday of mine, my significant other surprised me with a trip down memory lane – it had been a few years since I’d stopped by the Rabbit Hole and immediately, I started to wonder how I’d somehow left it out of my current restaurant rotation.

After an appetizer of their herb-crusted artisan bread with whipped butter (delicious), I ordered the chicken cordon bleu and she got the filet mignon.

Aside from the presentation of both dishes being spot-on, I couldn’t get enough of my chicken, stuffed with creamy gouda, bacon lardon, and smoked ham. Making the dish especially noteworthy was the whiskey cream sauce glaze. The roast carrots and mashed potatoes on the side were some of the best I’d had, too.

She also discovered that her steak was a great choice, and after stealing a bite, I’d have to agree.

With a well-earned 4.5-star rating on Google Reviews, Rabbit Hole is great for a special night – whether you’re grabbing a bite or just a cocktail with a friend. Don’t skip out on giving this spot a try.
