Denver’s Sandoitchi pop-up combines Japanese sandwiches with Instagram aesthetics
At Denver’s latest restaurant pop-up, it’s hip to be square.
RiNo’s Zeppelin station is once again hosting Japanese sandwich pop-up Sandoitchi, which will be open until Saturday.
Sandoitchi makes Japanese-style sandwiches which mirror the kind found in Japanese “combini.” Japanese convenience stores, known as “combini,” have redefined the perception of convenience store food with their unique and high-quality offerings. The sandwiches, with their visually appealing and artfully crafted presentation, make for irresistibly shareable content on Instagram.
Established in 2020 as an experimental pop-up amid the pandemic, the restaurant quickly achieved cult status through a series of pop-ups, one-day food trucks and flash offerings. Steering the culinary direction is Chef Stevie Nguyen, whose Japanese restaurant background boasts prior experiences at establishments such as Uchi, Morimoto and Momofuko.
The menu showcases a variety of delectable options, including the egg salad sando featuring a blend of scrambled egg salad, soft-boiled egg, toasted green pepper and kewpie mayo. The spicy truffle chicken katsu sando offers a tantalizing combination of koji chicken, cabbage, kauboi hot sauce and black truffle kewpie mayo.
For those with a sweet tooth, the fruit salad cream sando presents a delightful mix of fruits and matcha cream. It’s also available in a strawberry and cream standalone version. Lastly, there’s the savory shrimp ebi sando which rounds out a diverse and satisfying range of sandwich choices.

There are also refreshing drink options like the Yuzu Arnold Palmer, adding a hint of Japanese citrus refreshment to a classic.
Typically, each week’s menu becomes available for pre-order on Sandoitchi’s website the preceding Sunday, and customers collect their items on a scheduled day. Unfortunately, the current week’s sandwiches are sold out, but the pop-up is accepting walk-ins on Tuesday through Saturday from 11 a.m. to 3 p.m. until Feb. 10.
Following the Denver pop-up, Sandoitchi planned another pop-up in New Orleans at the Louisiana NOLA Nite Market on Feb. 23 and 24. before returning to its permanently established brick-and-mortar location in Dallas. That location is open Wednesday through Sunday.
The Sandoitchi pop-up has come to Denver regularly, but a spokesperson for the restaurant told the Denver Gazette that a future date following the current pop-up has yet to be determined. The business is still hopeful of bringing a permanent presence to the city, however.
