Luxury Colorado resort set to offer 3-course prix-fixe meal celebrating local flavors for state’s 150th anniversary
Planning for a March fine dining experience in Colorado Springs? The Broadmoor is offering a special prix-fixe meal you won’t want to miss.
In celebration of Colorado’s 150th and America’s 250th anniversaries this year, The Broadmoor’s Summit restaurant will be offering a multi-course meal for $150 – or $250 with a wine pairing. The meal for two includes each person’s choice of soup or salad, two entrees, and two desserts. Dishes aim to bring “the flavors of the region to life.”
Here’s a look at what’s included among the options:
Appetizers
- Charred Radicchio Salad (with Arugula, Asian Pear, Spiced Pepitas, Pomegranate & Persimmon Vinaigrette)
- English Garden Pea Soup (with Preserved Lemon Marmalade, Mint, Chive Yogurt, Pea Tendrils)
Mains
- Eagles Nest Ranch Honey Glazed Chicken Breast (with Colorado Asparagus, Spring Beans Fricassee & Garlic Chips, Lavender & Honey Reduction)
- Risotto al Fungi (with Roasted Fort Collins Mushrooms, Parmesan, Lemon & Fontina Espuma)
- Colorado Striped Bass (with Moroccan Couscous, Golden Raisins, Toasted Almonds, Turmeric Yogurt Crema)
Desserts
- Pistachio Apricot Tart (Sweet Dough, Pistachio Frangipane, Rosemary Apricot, Marmalade, Pistachio Crumble)
- Mikado Chocolate Bomb (Milk Chocolate Mousse, Old Fashion Cake, Chantilly Caramel, Salted Butter Soft Caramel, Biscuit Mikado)
The deal will be available from March 1 through March 31. It’s also worth noting that a 20% gratuity charge is added to the bill.
