Newest “Tom’s” restaurant set to open Monday
Prominent Denver restaurateur Tom Ryan, co-founder of SmashBurger, Friday unveiled the newest restaurant in the “Tom’s” line – Tom’s Watch Bar at McGregor Square.
While the sports bar, tap room with A.C. Golden Tank Room and the Top Golf suites aren’t officially open until Monday, family and friends got to experience a soft opening Friday while the ribbon cutting for McGregor Square was happening in the plaza and Rally Hotel.
“There’s nothing like this in Colorado,” Ryan said, who also runs a Tom’s Watch at Denver International Airport and used to operate Tom’s Urban in Larimer Square before it closed in 2018.
The 150 LED screens that broadcast not just Colorado Rockies games, but all sports, are everywhere and can be combined to make huge screens. Ryan said customers will get a serving of not just pro sports, but collegiate and even far out ones like Russian face slapping. They’ll be able to use an app to stream the sound from the screen they want to watch.
“Every seat is the best seat in the house,” he said.
There’s wraparound deck in the plaza with an outdoor bar and screens there, too. The bars have 80 taps to serve up 40 different beers, including the obligatory craft beers served in two-handled 40-ounce steins.
As far as food, Ryan said all the sports bar staples are there, with “unexpected” offerings like pork belly and an ahi tuna tower.
Upstairs, the A.C. Golden Tank Room has a different vibe with almost no screens. A.C. Golden’s Kaitlyn Stechmesser, spokeswoman, said the dual tank system is likely the only one in Colorado and “one of the first in the U.S.”
The four copper tanks sit above the bar, which serves staples from its flagship brand Colorado Native. A.C. Golden is the craft brew section of the Coors family of beers, she said.
“The beer is brought in fresh from the brewery in Golden and is never touched by oxygen or sunlight – you can drink like a brewer it’s so fresh,” Stechmesser said.
Colorado touches are everywhere, from the ski lift chairs from Arapahoe Basin to the gondola from Telluride.
“It’s like a 1-2-3 punch,” Ryan said. “You got the sports viewing downstairs, the ability to relax with craft brew upstairs” and the gameplay from the Top Golf suites, which also work with footballs, baseballs and soccer balls.
“I told Dick Monfort if you give us this opportunity, we’re going to be your best partners on campus,” he said.
